Sprouting mung beans can be done by leaving them in a bowl of water for an amount of time depending on their size. They should be left in a warm area, out of direct sunlight. It is certainly worth the time to do this because sprouted ones offer increased nutritional values. Carbohydrates are reduced when sprouted, and protein increases. Lipids and minerals also increase when sprouted.
The healthiest way to eat sprouting mung beans is raw. When any food is cooked it will lose some nutritional value. If you are going to boil them, it is best to re-use the water they were boiled in for a sauce. When added to a salad they make a tasty and crunchy addition, they can also be added to sandwiches in this way, and other dishes.
